Lasagna Spasagna

... or at least that's what I've renamed this delicious and family friendly dish!
 
This lasagna is so yummy, and tastes even better when reheated.  I make a full pan, and Todd & I eat it for lunches the rest of the week.  Delish doesn't even begin to describe it.  Heads up peeps, this is a meat free lasagna, but in no way is it lacking!!

You will need...

12 lasagna noodles (for one 9 x 13 pan)
12 oz frozen chopped spinach (or you could use fresh that you've cooked down...frozen is easy peasy)
12 oz small curd cottage cheese
1 egg
2 T oregano
1 T garlic salt
4 cups shredded mozzarella
6 cups spaghetti sauce (I just used a jar since I like my lasagna a little less "saucy")

Get it done...

Preheat that oven to 350

Boil water and cook your lasagna noodles until they are al dente; drain, then rinse in cold water

Microwave your frozen spinach to defrost (about 2-3 minutes) and squeeze out excess water. 

Combine the next 5 ingredients in a bowl (spinach, cottage cheese, egg, oregano, & garlic salt)



Spinach Mix

Spray 9 x 13 pan with non-stick cooking spray (I used Olive Oil spray, it's the bomb.com)
Layer 3 lasagna noodles to cover the bottom of the pan and cover with 2 - 3 cups of spaghetti sauce and an even thin layer of the spinach mixture

Layer three more lasagna noodles, 2 - 3 cups of the sauce and 2 cups of cheese

Repeat the spinach layer and mozzarella layer, ending with mozzarella on top

Ready to Bake

Bake at 350 for 35 mins or until cheese is melted and slightly golden

That's it!  It would feed about 6 - 8, add a quick side salad & garlic bread and have everyone impressed with you!
